Hello again fellow steemers! Today I will be showing you how to make on of my favorite summer sandwiches. As you can see my inspiration came from my Italian roots as well as my love of pesto. It is both filling and refreshing.
Ingredients:
- Fresh Mozzarella
- Roasted Red Peppers ( jarred with olive oil)
- Arugula
- Fresh Italian Sliced White Bread
- Mayonnaise (to brown the bread with)
Pesto Aioli (Pesto Cream Sauce)
- 1 cup fresh basil
- 3 medium garlic cloves
- 1/4 cup olive oil
- 3 Tbsp Mayonnaise
- Pepper
- 2 Tbsp Parmigiana Cheese
Instructions
- Take all the pesto aioli ingredients and put them in a food processor and process till a nice pastey consistency forms
- Take your slices of bread and spread mayo lightly on all sides, place in a med-high heated pan. You are looking for a nice brown color on the bread
- Take a slice of bread and smear the pesto aioli on it, on top of the aioli add a handful of arugula. Next place 1/4 inch slices of the fresh mozzarella cheese on top of the arugula. Then take a whole roasted red pepper and cut in 4 equal pieces and place. Close the sandwich up by spreading more aioli on the other slice and place on top.
On this occasion I forgot to brown my bread but it was sill amazing!
