Yummy Biscuit Roll
Here I show you an very easy evergreen recipe of a lemon biscuit roll.
Dough: 3 egg whites, 3 tablespoons of water, 150 gr. sugar, 1 pack of vanilla sugar, 3 egg yolks, 60 gr. of flour, 60 gr. of Mondamin, 1 stricked teaspoon of baking powder.
Beat egg white and cold water very stiffly. Pour in the sugar and vanilla sugar and beat briefly underneath. Fold in the egg yolk. Mix flour, lunar amine and baking powder, sieve over it and fold in loosely. Place a greasy baking sheet and spread the dough on it and bake at 180 degrees for 15 minutes.
Immediately drop the sponge cake onto a cloth and peel off the baking paper.
Roll up the sponge cake plate with the tuck, let it cool and roll back afterwards.
Filling: 1/4 litre water, 1/2 lemon peel, 4 tablespoons lemon juice, 100gr sugar, 40 gr Mondamin, 3 sheets of white gelatine, 1/4 litre cream, icing sugar.
Spread the filling over the plate, roll up again with the cloth and sprinkle the roulade with pucer sugar. For the filling, mix water, grated lemon zest, sugar and Mondamin and cook briefly while stirring. Dissolve the soaked, squeezed out gelatine in it and allow the cream to cool under frequent stirring. Then fold in the whipped cream.
Let the roulade rest in the refrigerator for 2-3 hours.
