Today Mama's going to show you how to make decadent Choc-Mint Brownies, so please stop reading if you're on a healthy eating program as you will not be able to resist this pure chocolate indulgence!
Ingredients required:
Place 175 gram Butter, chopped and 150 gram Dark or Milk Chocolate, chopped in a heatproof bowl over a pot of barely simmering water.
Be careful the base of the bowl does not touch the water.
Stir mixture till butter and chocolate has melted and is smooth. Set aside to cool for about 20 minutes.
Butter a 20cm square cake tin and line with baking paper, turn oven onto 170 C fan (or 180 C regular oven).
Whisk 3 Eggs and 300 gram Castor Sugar (1 1/4 cups) together till light and fluffy with an electric hand beater.
Fold the melted chocolate mixture into the egg mixture with a large spoon.
Sift over 75 gram Cake Wheat Flour (1/2 cup), 40 gram Cocoa (1/3 cup) plus a pinch of Salt and fold in gently.
Pour into prepared tin.
As if there's not enough chocolate heaven in this mixture, Mama takes a 100 gram slab of Mint Chocolate and grates it over the raw dough.
Brownies are baked in 170 C fan oven for 30 minutes or until there's no wobble when you shake the tin.
The entire house smells like Chocolate Heaven; sorry Papa Bear, you know you can't have any, Mama Bear will make you hot cocoa drink without sugar ;)
Leave brownie to cool a little before turning out (or leave in pan if you wish)
Turn over again and leave to cool completely before dusting with icing sugar.
Cut into squares or fingers.
Makes a lovely little gift for a special friend.
