Mama just loves playing in her kitchen & when she saw these two beauties, she knew something special had to be invented.
It was almost dinnertime, Papa Bear as a diabetic had to have his meal soon, and as usual she left everything to the last minute! She would make Meatballs en-wrapped in Peppers.
She had no time to waste, and quickly sliced the peppers across so she had a couple of pepper rounds.
The ingredients for her meatballs: Ground Beef, Diced Onions, Chopped Spring Onions, Fresh Mint, Bread Crumbs, 1 Egg, Seasoning to taste.
Mama quickly made up her meatballs and pressed it into the pepper shapes, not sure if this was going to work, but looks good so far. She made some plain old fashioned meat balls as Granny Bear does not like peppers!
She pan fried the meatballs.
She had to be careful when turning them, yep lots of splattering, but the aroma from the pan was amazing, attracting Papa Bear who was getting ravenous now.
Creamy mashed potatoes, oodles of yummy gravy and fresh veggies completed the meal, the peppers complementing the meatballs wonderfully.
The next morning, Mama Bear still had another pepper trick up her sleeve for breakfast. There were some pepper rings left over that would make the perfect baskets for sunny side up eggs.
Pepper and Eggs tasted even better than the meatballs the night before, really a nice pairing!
