Chicken Maqlooba
Are you feeling hungry? Why not try this amazing recipe, it gives tasty results every time!
In 1 tbsp olive oil fry...
1x Onion, 1x 2 inch cinnamon stick, 3x green cardamom pods and 3x cloves.
Crush 2x green chillies and 3x garlic cloves, add to the pan with 2 tsp Arabian masala (i.e: Ras el hanout), 2 tsp salt and 4 chicken leg pieces, sectioned in two (thigh and drumstick).
Add 2 cups of water and cook the chicken.
While cooking, fry sliced potato, tomato, carrot, green pepper, pink onion, aubergine and set aside on tissue.
Take the chicken out of the stock and add 2 cups of water. Add 2 ½ cups of soaked rice and ½ tsp salt. Add a green chilli and cook the rice.
Mix the juice of ½ lemon with ½ tsp crushed black pepper, ¼ tsp salt, a pinch of red food colouring and 1 tsp soy sauce and coat the cooked chicken. Shallow fry it until reddish brown.
Layer the vegetables, then rice, then chicken, more vegetables, chopped green coriander, then more rice, and more food colouring (if required).
Leave it on a low heat for a few minutes then lightly mix and serve.
