So, I decided to make scallops this weekend over linguini noodles.
First you take an ounce package of basil if you don't have fresh homegrown...
Then add 5 or 6 leaves of fresh spinach...
As well as an ounce of pine nuts...
Plus a tablespoon of parmesan cheese...
...into a food processor, pulse & slowly add about a 1/4 cup of olive oil...
Meanwhile, cook about 8 ounces of linguini noodles with a pinch of salt & oil. Strain them & mix the pesto into the noodles.
Sear the scallops in a cast iron skillet with about 2 tablespoons of butter.
add some diced pablano peppers & you end up with a tasty meal!
