The main reason why I cook this way because it's easy and I don't have to clean that much and also makes the food more fancy in a classic way.
Next time if I have party, I just wrap it all with parchment paper or regular baking sheet in one shot and each person has one.
My own original recipe.
Prep Time: 15 minutes / Cook Time: 20 to 25 minutes
Ingredients:
1 lb finfish smelt
4 cloves cracked fresh garlic
8 to 10 stems of fresh oregano
2 teaspoon dried basil
1 squeezed fresh lime
1/2 cup olive oil
Chili flakes if you prefer
salt and black pepper
Parchment paper or regular baking sheet (I'm using regular baking sheet)
Method:
Clean the fish (stomach and head) and place them in a bowl. Marinate them with 2 teaspoon dried basil
1 squeezed fresh lime, 1/2 cup olive oil and salt also black pepper.
Place two to three stems of fresh oregano and cracked garlic on parchment paper or regular baking sheet and lay some marinated fish then fold it (make sure to seal it so it won't leak and no air comes out so it's faster to cook).
Bake them for 20 to 25 minutes over 300 degrees. Let it cool and keep refrigerator, it will last up to two weeks as long as covered with olive oil from the fish when you cook them.
