Hi guys, hope you are doing well. I made French lentil soup today. I like French lentil because it cooks faster and really perfect for soup. Also to me, the taste is more similar to mung bean, earthy.
My own original recipe.
Prep Time: 15 minutes / Cook Time: 30 minutes
Ingredients:
3/4 cup french lentil or regular lentil
1 medium cooked chicken breast
6 oz brown mushroom- roughly chopped
1 shallot
1 teaspoon dried basil
1 liter water
2 tbsp butter
1/2 cup parmesan cheese
black pepper
French grey salt or regular salt
Method:
Rinse the French lentil and bring to boil until it's soft.
Heat the butter and fry the shallot until fragrant, then add the chopped mushroom. Keep stirring the mushroom until it's cooked then add it to the lentil.
Cut the chicken breast in to small peaces and add it to the pot, add also black pepper, french grey salt and dried basil. Turn off the heat and add the parmesan cheese.
Using a hand blender, blend the soup until it's smooth. Serve with French bread or any regular bread.
