Here's an idea to give them some protein too, super fast and light that's perfect for snacking or tea time.
My own original recipe.
Prep Time: 10 minutes / Cook Time: 15 minutes
Ingredients:
6 to 8 sole fish fillet
2 handful frozen seasoned potato puffs-roughly chopped
2 teaspoon dried oregano
1/2 lemon
Black pepper and salt
Olive oil
Method:
Wash the fillet fish and dry it with a paper towel. Season the stomach of the fillet with salt, black pepper and oregano and flip the fillet.
Start to fill only the edge with a spoonful potato puffs then roll it to the end.
Drizzle with 1/2 lemon juice and some olive oil, grill them and transfer into the oven for 5 minutes over 350 degrees.
Serve.
To make the crispy parmesan cheese, just spread the grated parmesan cheese into the griller and chill it on baking sheet or plate.
