Get breakfast with triple antioxidants? Yes. Beta carotene from sweet potato will give you vitamin C once you consumed and blueberry is the king of antioxidant will give you a refreshing light tart.
Nothing compares, when this muffin is offering you another source of antioxidant from banana. Overall, is not only for breakfast, can be in Tea Time with your favorite tea.
I created this cake, (well, can be muffin, cup cake or regular cake if you bake in different types of cake molds) so my husband can just easily grab something if he is starving while he works.
Ingredients you need: 5 egg yolks, 4 egg white, 1 cup mashed sweet potato (bake or steam), mashed 1 medium banana, 1 1/2 cup sugar (divided), 1/4 cup heavy cream or milk, blueberry as you prefer, 1.5 cup all purpose flour, 1/2 cup of butter (room temperature), pinch of salt, vanilla extract, 2 teaspoon baking powder and 1 teaspoon of baking soda.
Step One:
Mix mashed sweet potato and banana and set aside. In another bowl mix flour, salt baking soda and baking powder by sifting it and set aside.
Step Two:
Start to whisk the egg white with 1/4 cup of sugar manually or using a hand mixer until it's epoque white foam, set aside.
Step Three:
Mix butter and sugar and beat the mixture using a hand or stand mixer with low speed, add the yolk one at the time then continue with high speed until it's fluffy and thick follow with mixture sweet potato and banana.
Alternately add dry ingredients and heavy cream or milk using a spatula. Then fold the egg white clockwise using a spatula.
Step Four:
Pour into the the cake mold and bake over 350 degrees until it's cooked or when the wooden pick comes out clean if you insert into the center of the cake.. The duration of baking time may varies depending on the kind of mold you use.
The DIY mold ring I made from aluminum foil, I just want something nicer with my presentations plate. I don't think it should be an expensive thing while we can make it ourselves, although in the end it looks exactly the same as made with stainless steel mold ring.
As you see the cupcake's cup doesn't look the same, (yep) that's me when I'm cooking. As long as it works, I go for it.
By the way, the garnish is a crunchy pistachio crystallized sugar.
