It´s been a while since I posted my last recipe.. Today, I´m sharing with you an easy peasy recipe on cake bars. Blechkuchen is a german word for cakes or sweets baked in an oven tins or metal baking forms. The word Blech literally means Metal + Cake. This is called so because you can serve the cake/bars direct on the table and everyone get a slice of the cake. In this recipe, I used my basic recipe which I have been baking from the past... It is a recipe from hubby´s grandma where all ingredients are combined together without making much effort...
I always baked this when we crave for something sweet and yesterday, we wanted something sweet. And since I went biking, I was a bit hungry afterwards. So I thought of baking this easy peasy recipe. Good for coffee or tea, you will never go wrong when you serve these bars to your guests..
Apple Pecan Raspberry Cake Bars
Ingredients - Batter
250 g Flour
150 Sugar ( 7 tablespoons of Stevia Powder)
100 ml Oil
100 ml water
4 Eggs
1/2 pack baking powder
1 pack vanilla sugar
Juice of 1/2 Lemon
1 Tablespoon honey
Toppings
2 medium apples, cored, halved and sliced
1 nectarine, cored and sliced thinly
1/3 cup dried raspberries
1/3 cup pecan nuts ( crumbled)
Preparations:
(Preheat oven at 170°C)
1... Use 2 baking containers to separate the eggs.
In the first container, beat the egg yolk, add the sugar or Stevia powder, vanilla sugar and lemon juice. Beat until the mixture becomes smooth in consistency. I use a spatula to fold in flour and the sifted baking powder to the egg yolk mixture adding thereby alternately water and oil.
2... In the 2nd container, beat the egg whites until they get stiff and peaks have built, carefully folding this into the egg yolk mixture in the first container. Spread the batter in a lined rectangular baking tin. Arrange the sliced apples and nectarines and push them deeper in the batter as in sinking half of the slices into it.
Then, arrange the raspberries and pecan nuts on top of the batter. Using a pastry brush , spread the honey on topping evenly. Cover the form with aluminum foil. Place the form on the lowest rack and bake in a preheated oven under 170°C for about 20-25 minutes. In the last 5 minutes of baking, remove the foil to make the top of the cake golden brown.
3... Remove the baked cake from the oven, let the cake form cool down in a wire rack. Cut the cake into bars depending on the size of the bars you like. You may serve the whole cake in the tin form or remove the bars and place these on a platter. Optional : serve the bar with whipping cream or ice cream and cold drinks.
