- 2 cups of milk;
- 1 cup cream (not less than 30% fat content);
- 2 cups of basil leaves;
- ¾ cup of sugar;
- 6 eggs;
- ¼ teaspoon of salt;
- 1 tablespoon lemon zest;
- 100 g blackberries.
Preparation
Combine milk, cream and ½ sugar in the saucepan. Heat over low heat until the sugar is completely dissolved. But in any case, do not bring to a boil. As soon as the first bubbles begin to appear, remove the sauté pan from the fire.
Whip the second half of the sugar with a blender with egg yolks, basil, salt and zest. Gently enter the egg-basil mixture into the cooled milk-cream. Once again, beat and send to a water bath. Stir constantly until the cream thickens. It is also important not to allow boiling.
Thickened mixture is poured into a container, suitable for freezing. When it is a little cool, send it to the freezer for 5-7 hours. Every 60 minutes, take out and mix the gelato.
