Today we'll learn how to prepare the moroccan Tanjia who's called " Tanjia marrakchia", because it's originally from the city of marrakech,
first, In a bowl, mix the chopped meat, saffron diluted in a small glass of water, cumin, black pepper, ras el hanout and salt. Let macerate overnight in the refrigerator.
then,Put all the ingredients in the tanjia, the whole cloves of peeled garlic pour a small glass of water, shake all to mix, close with paper and string, drill a few holes and take to the "collective oven" for cooking in hot ashes. Serve very hot.
