In traditional Polish cuisine, a meat cutlet, potatoes and salad are served for dinner. So, what do Polish vegetarians eat for dinner? Vegetable cutlets of course ๐
My vegan rice cutlet with tofu and sundried tomatoes are crispy and delicious. You can serve them with sunflower seeds sauce.
Ingredients:
- 3/4 cup of white rice (you can use a sticky rice)
- 1/2 jar of dried tomatoes in oil
- a large bunch of parsley
- 60 g smoked tofu (about 1/3 cubes, you can add more)
- Himalayan salt
- freshly ground pepper
- corn or amaranth flour
- frying oil, e.g. coconut refined
Preparation:
1. Cook rice. ย
Rinse the rice several times before cooking. Then pour in fresh water, add a pinch of salt and cook until tender. ย The rice should be sticky.
2. Prepare the filling. ย
During this time, we make the filling: put the tomatoes in the blender with the oil, parsley, crumbled tofu and pepper, blend. Check the taste and add salt if necessary. ย
3. Form the cutles. ย
Put rice with a spoon into your hand, flatten and grease with filling. Wrap in half to form a cutlet. Press well to make the rice compact and the filling stay inside. ย Finish the cutlet with corn or amaranth flour.ย
4. Fry the cutlet by turning them until they are browned and crunchy.
