Fast and fresh
As you know, I am a busy mum of three young children. I love cooking but don't have time to spend hours in the kitchen anymore. There are some nights when I can't be bothered and we eat chicken nuggets but most of the time I cook fresh and nutritious, fast home-cooked food.
Fish Curry
I just wanted to share my recipe for fish curry with you. It's very simple and you can get the food from frying pan to fork in less than 30 minutes! Plus it's yummy and is a big hit with my kids. It has a nice balance of creaminess from the coconut milk, a kick from the chillies and zing from the lemon.
Reduced carb meal
When I'm cutting back on carbs I eat this fish curry with lots of stir fried vegetables. The recipe also works well with prawns. Let me know if you get a chance to try out the recipe or if you have any fresh and fast recipes you'd like to share.
