Hello wonderful people out there! Are you in a mood for a sweet chocolate treat today? I hope you are because I’m here with some gooey chocolate bliss balls.
These are raw vegan, gluten free, refined sugar free and low fat. You only need 4 very simple ingredients and 10 minutes to make them.
Can you believe there is no oats in this recipe!? Crazy, I know. If you are new here, I use oats everywhere, especially in raw desserts. This time I instead of oats used rice cakes. Mhm, you heard me right. Rice cake flour gives a fluffier and lighter texture than oat flour. It also soaks the liquid in a lot better. If you are a fan of gooey desserts, definitely try using blended rice cakes as a base.
These bliss balls are a perfect movie snack, lunch box snack or evening dessert. They are super rich in chocolate flavour but they are also light and fluffy and at the same time gooey. Much to handle, I know.
I made these this morning and have been snacking on them while doing some work. There’s only 4 of them left. Hopefully, that tells you how good these are.
If you are wondering why these look so black, it’s because I used extra dark cocoa. I have mixed feelings about it. One day I love the taste of it and another day I hate it. If you’ve never had extra dark cocoa before, it tastes pretty similar to regular cocoa just that it more tastes like dark chocolate and is not as bitter (at least that’s how I would describe it). To be honest, I like regular cocoa more.
4 – INGREDIENT GOOEY CHOCOLATE BLISS BALLS
| INGREDIENTS
- 5 rice cakes
- 15 dates, pitted
- 1/3 cup cacao powder (more or less, depending on how chocolaty you want them to be)
- splash of plant-based milk
| METHOD
1/ Break rice cakes into smaller pieces and place them in a food processor or blender. Blend until you get flour-like powder.
2/ Add cacao powder and dates. Blend again. If not sticking together, add a splash of plant-based milk. Blend until you get dough-like consistency like shown in the picture.
3/ Form into balls. Place in the fridge for about 30 minutes to set. All you have to do now is enjoy these delicious chocolate balls. Store in fridge.
