This is one of the most loved @ kids parties ! Spread sliced berries through the mixture or add some melted chocolate to make it to die for.
Ingredients for the base
- 40g desiccated coconut
- 50g almond flour
- 60g melted butter
How to make the base
- mix the ingredients and press them into 12 little glass jars
Ingredients for the cheesecake
- 125 ml water
- 20g gelatine
- 250 ml cream
- 225 g cream cheese
- 2 cups (500ml) buttermilk
- 80 ml honey
- zest of 1 lemon
- 1 teaspoon vanilla extract
- fresh berries to server
How to make the cheesecake
- Pour water into a heat resistant bowl and sprinkle with gelatine. Wait for 5 minutes.
- Pour the remaining ingredients into the bowl of an electric mixer and whisk until thickened.
- Melt the gelatine mixture over simmering water until it's clear. Spoon a few tablespoons of the cheesecake mixture into the gelatine and mix well. Pour the gelatine mixture into the bowl and with the cream cheese and mix well.
- Pour the cheesecake filling into the glass jars and chill in the fridge for at least 4 hours to set.
- Serve with fresh berries.
