These little, yummy bites of cauliflower are so irresistibly delicious. They are the perfect party favor food to please both vegetarians and meat-eaters.
In my recipe, honey is added to the the buffalo sauce to mellow the heat. But if you are one of those people that likes it really hot, feel free to leave it out.
Cauliflower is often mentioned as a diet aid, because it is high in filling fiber, while low in carbohydrates. But for me, the best thing about cauliflower is its ability to take on so many forms and flavor. Like in this dish, that mimics hearty and spicy buffalo wings, while also providing you with nutrients and antioxidants.
Ingredients:
- 1 head of cauliflower
- 1/2 cup panko breadcrumbs
- 1/2 cup flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon ground pepper
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons honey
- 1/4 cup buffalo sauce
- 2 tablespoons neutral oil, like canola
- optional ranch dressing, for serving
- Preheat oven to 450 degrees farenheit.
- Cut the cauliflower into .5 inch to 2 inch pieces and set aside.
- In a large bowl, combine the flour, breadcrumbs, paprika, salt, and pepper. Add the milk and mix until fully integrated. The batter should be thick.
- Add the cauliflower to the bowl and stir. Each piece should be coated in the batter.
- Place the cauliflower on a parchment paper lined baking sheet in a single layer. Bake for 25 minutes.
- While the cauliflower is baking, combine the buffalo sauce, honey, and oil in a small bowl.
- After the 25 minutes of baking time, remove the cauliflower and place or in a large bowl. Pour the buffalo sauce mixture on the cauliflower and stir until each piece is coated with the buffalo sauce.
- Return to the baking sheet and cook for an additional 20 minutes.
- Serve warm with ranch dressing, if desired.
