I like simple, quick recipes, because I usually don't have time to spend hours in the kitchen while I'm working.
Today's lunch was a mix of cauliflower rice, sweet yellow corn, green peas, chopped tomato and onion, topped with bean hummus and lentil sprouts. The entire meal is done in 15 minutes :)
Bean hummus recipe:
Put 2 cups of cooked kidney beans, 1 clove garlic, pinch of salt, 1/2 lime juice, 1/2 tsp ground red paprika in a blender and blend it until smooth.
