Good day Steemians, today I prepare a soup that everybody will surely love. This recipe is very popular in our country Philippines, we love this recipe especially during rainy season. This also suit for the month long celebration of Mahal na Araw which we limit ourselves to eat meat, so we prefer to eat vegetables or seafoods.
In our place also you can find fish port (Malabon Fishport) there you can buy variety of seafoods.
INREDIENTS
- 1 kilo shrimp
- 1 bunch water spinach (kangkong), cut in 3 inch length
- 3 pcs. tomatoes, quartered
- 1 large onion, quartered
- 8 cups rice water
- 1 pack sinigang mix (tamarind soup base mix)
- 3 pieces long green pepper
- 3 tbsp fish sauce (patis) or salt.
- 1 pc. of medium size radish
- tablespoon of cooking oil
Other vegetables that you may include on this recipe
- eggplant
- string beans
- lady finger (okra)
- you may also combined it with milkfish
- instead of swamp spinach you may also use kamote tops
PROCEDURE
- On a pot put the cooking oil then saute' the onions and tomatoes.
- Put the rice water into the large cooking pot and bring it to boil.
- Wait until the onions and tomatoes become soft
- Add the shrimps, radish, long pepper and fish sauce/salt then simmer for 5 minutes
- Put the sinigang mix and simmer for 2 minutes
- Add the water spinach (kangkong), turn the heat off.
- Just cover it for 5 minutes.
- Serve hot with plain rice.
RECIPE TIPS
- Make sure to not overcook the shrimp for best results.
- The water spinach should be added last.
