Morning everyone!
Last night we were feeling something fresh, but kind of comfort food-ish so I decided to do a big batch of these, quite easy just a bit time consuming!
I already had rice leftovers in the fridge so all I purchased was:
1- pre roasted chicken
1- can of red enchilada sauce
1- can black olives
1- package of Monterey Jack cheese
1- pack of flour tortillas.
1- can refried beans
- olive oil
Then for the salsa and guacamole you will need
- 3 avocados
- 4 tomatoes
- 1 red onion
- 2 cloves garlic
- 2 limes
- fresh cilantro
- a bit of salt.
To make your filling add in your shredded chicken, I did approximately 2 breasts. Then add your rice, roughly 2 cups and your enchilada sauce. Let that simmer.
In a small pot heat up your refried beans so they are easier to put in your tortillas.
Grab 2 bowls and make your salsa and guacamole. For your salsa chop up 4 tomatoes, 1 garlic clove, 1/4 of the onion, juice of one lime, a few sprigs of cilantro and a dash of salt.
For the guacamole mash up your 3 avocados, 1 Tbsp of chopped onion, 1 garlic clove, the juice of one lime and salt.
To make your chimichangas layout your tortilla shell, put a decent scoop of the meat and rice mixture on it. Scoop a dollop of beans ontop of that. Sprinkle your olives and cheese then wrap it up and fry it in a small amount of oil in your regular frying pan. Repeat and make as many as you like!
I like to layer everything ontop of my chimichangas, a good scoop of sour cream, guacamole and then finish off with a scoop of salsa!
