Chamoe + Prosciutto = Wrapture
A case of the sweet meets salty...and together,
they dance on your tongue with playfulness and surprise.
This recipe is an adaptation of the oft paired cantaloupe and prosciutto. Being that this a first encounter with a chamoe, I wanted to get acquainted with the fruit for the initial experimentation. And as the ole' "keep it simple" adage goes, this recipe comprises of the melon with two of my most favorite staple ingredients: arugula and prosciutto.
Ingredients: chamoe (or melon of choice), prosciutto, arugula
Optional: Fairy dust or E.B.T.B. (see picture) or plain sesame seeds
• When to serve: mid-morning snack, post-siesta, cocktail hour, any hour.
Pairs very well with any cheese platter.
• Remove seeds and middle membrane
• Peel the skin off with a pairing knife
• Continue with slicing the halves into smaller pieces
• Take a sheet of prosciutto and tear in half
• Wrap prosciutto around melon slice
• Place a handful of arugula on the serving platter, and arrange finished melon slices on top
• Sprinkle with sesame seeds or "Everything But the Bagel" and serve
