I found this recipe online and modifyed it some... please read my blog and try for yourself. Enjoy!
INGREDIENTS:
- 1 butternut squash
- 2 tablespoons of butter (I prefer Kerrygold)
- brown sugar
- salt
- pepper
DIRECTIONS:
- Preheat oven to 400 degrees F
- Cut butternut squash lengthwise *caution butternut squash is difficult to cut, imagine trying to slice a solid pumpkin*
- Discard seeds
- Place squash skin down on baking sheet
- Put one teaspoon of butter in void then spread a layer of butter on the hard flesh
- Generously sprinkle with brown sugar
- Salt and pepper to taste
- Bake 50~60 minutes, or until flesh is soft
- Stir to mix remaining flesh with remaining butter
- ENJOY
