I love the Mexican cuisine and steak and chicken fajitas are a regular at our house. They are easy to make. I made my own salsa but you can use your favorite brand. Homemade is always better. I usually make chicken fajitas but steak is always a nice change. I love the flavor pallate of Mexican food. YUM!
Mexican Steak Fajitas
INGREDIENTS:
Steak Marinade:
1 to 1 1/2 pounds sliced beef - I used top sirloin
1/4 tsp. salt
1/2 tsp. black pepper
2 tsp. chili powder
1 tsp. cumin
1 tbsp. olive oil
*Mix above ingredients in bowl and refrigerate for 1-2 hours
Salsa:
1 diced large tomato
1 tbsp. diced roasted red bell pepper
1 tbsp. salsa verde
1 tbsp. finely diced red onion
1 chopped chipolte pepper
squeeze of lime
1 tsp. olive oil
salt and black pepper
*Mix above ingredients in bowl and refrigerate for 1 hour
1 cup sliced onions
1 cup sliced bell peppers
1 diced chipolte pepper
3-4 cloves minced garlic
flour tortillas
