I couldn't start my blog without saying something more about Marchesi.
Gualtiero Marchesi was born in Milan in 1930. His approach to gastronomy takes place at a young age, when he begins to practice in the kitchen of the hotel restaurant "Mercato" owned by his parents.
His professional training begins at the Kulm in St. Moritz and at the hotel school in Lucerne (1948- 1950).
Back in Italy he works at the "Mercato" hotel where he proposes avant-garde cuisine that draws on classic texts.
Subsequently he improved his culinary techniques in some of the best French restaurants such as the "Ledoyen" in Paris, "Le Chapeau Rouge" in Dijon and the restaurant of the Troisgros brothers in Roanne.

He came back to Italy in 1977 and opened his restaurant in via Bonvesin de la Riva in Milan, receiving an immediate success: a star of the Michelin guide that will become two in 1978.
All gastronomic world talks about his restaurant and in 1985 got the 3 Michelin stars.
From 1985 to 2003 he lived a life full of awards and opened restaurants all over the world.
In 2004 ALMA, the International School of Italian Cuisine was born and has been strongly supported by Gualtiero Marchesi.
Gualtiero Marchesi has always said that ''the example is the highest form of teaching'' and with ALMA this belief can be expressed in an extremely articulate dimension.
This is what he said about the school :''Dear students, dear teachers, dear friends, I can say, without exaggeration, but with pride, that if ALMA is what it is that's also thanks to me. I do not know if it was more a birth or a paternity. Perhaps the two things together. I feel like a mother and also a father of this beautiful school. Here, one comes to learn the basics of the job, to learn the techniques to work and to make great Italian cuisine. You can do something great only if you study hard and practice the job without interruption ... "
He still lives in his school everyday.
