So most of you should know by now that I'm currently helping out at my partner's cafe in NZ so I'm constantly surrounded by freshly baked goods. Every morning fresh scones and muffins are made and the smell constantly tempts me. Unfortunately, they aren't vegan but lucky for me I have a decadent fluffy cafe style muffin recipe to veganise! These bad boys are not healthy for you. At all. The only nutritional value is really in the blueberries and the banana so this is definitely not a breakfast option. I could have made a healthier option with no refined sugars, GF flours etc but sometimes you just need to indulge in a sweet fluffy muffin! Sit back and enjoy these with a cup of coffee or tea and a good book. At least you know they're cruelty free right?
Banana Berry Muffins (Makes 6)
Ingredients
2 vegan eggs (I used Orgran No Egg replacer but you can substitute a flax egg/aquafaba egg as well. 1 flax egg = 1 tbs flax + 3 tbs water mixed together and left to thicken for 10 mins. 1 aquafaba egg = 3 tbs)
3/4 cup plant based milk
1/2 cup olive oil
2 cups self raising flour
3/4 cup caster sugar
1/2 tsp salt
1 large mashed banana
1 handful blueberries (about half a punnet)
Method
Preheat oven to 180 c
- Mix flour, sugar and salt in a bowl.
- Mix vegan egg, oil and milk in another bowl.
- Make a well in the middle of the dry mix and add the wet mix in. Stir gently. Don't overmix as this makes the muffins tough.
- Add the mashed banana and blueberries and stir in.
- Grease muffin tray and spoon the batter in.
- Bake for 15-20 minutes until tops are golden brown. Check with a skewer to make sure they are done.
- Let it cool down for 10 minutes. Dust with some icing sugar if you wish and enjoy!
