I was approached by to participate in a healthy breakfast challenge and when I read that it was Vegan I thought why not?! I love food, I love breakfast and I love promoting healthy easy vegan recipes so here I am!
Breakfast is such an important part of the day and if you start it off right you will be full of energy for the rest of the day! My favourite lazy breakfast is chia pudding because I make it the night before and just add various toppings in the morning. I always have the ingredients on hand as well so that's always a bonus when your fridge is running low in stock. I first learnt of this while I was at a raw vegan detox in Thailand and have not stopped eating it ever since! What I love about chia pudding is it is so nutritious and filling and super refreshing, especially in summer!
All you need is the base recipe of 1 parts chia 5 parts plant based milk (my favourite is vanilla almond milk or coconut milk) and then you simply add flavours according to your heart's desire! It is such a super versatile recipe! I always have chia and plant based milks stocked in my pantry as they don't go off so I know I can always have a super simple and healthy breakfast.
For this recipe I will be sharing with you my favourite combination...
Vanilla Maple and Cinnamon Chia Pudding (serves 2)
Ingredients:
1/4 cup chia seeds
1 1/4 cup Vanilla almond milk (If using regular almond milk just add 1 tsp vanilla essence)
1/2 tsp cinnamon
1 tsp maple syrup (or any sweetener such as coconut nectar etc)
Fruits and nuts (or smoothie) for toppings
Method:
- Mix all ingredients together in a container until combined.
- Let it set for 15 minutes if eating immediately otherwise cover and store in the fridge until you're ready to eat it. It will last in the fridge for 4-5 days.
- Top with your favourite fruits and nuts, or even your favourite smoothie! My favourite is berries, pomegranate, hemp hearts, pumpkin seeds and caramelised buckinis.

Matcha powder
Beetroot powder
Butterfly pea powder
Pitaya powder
Add maple syrup to sweeten to taste
