The weather is getting warmer now so I feel that I should use more fruits in my kitchen. I know that for fresh berries we have to wait for a couple of weeks but after this long winter I am so hungry of the fresh and colorful summer flavors.
This no-baking cake is very simple and you will not need a lot of time to spend in the kitchen. You can use the fresh fruits or the frozen one, it doesn't make a big difference. If you like you can replace the raspberries with other berries such as: strawberries, blueberries or maybe you will try some exotic fruits such as mango or pineapple. The range of possibilities is limited just by yours imagination. Hope you will enjoy this recipe.
Ingredients:
- 350 g oatmeal cookies (for cookie crust)
- 100 g butter, melted
- 15 g gelatine
- 60 g cold water
- 500 g mascarpone
- 200 g sugar
- 400 ml heavy cream
- 500 g raspberry
- 2 packages raspberry jellos
Method:
- Crush the cookies and add melted butter. Transfer the cookie crust into the form.
- Soak the gelatine in cold water until soft.
- Beat the heavy whipping cream with 100 g of the sugar. Add the rest of sugar to mascarpone and stir well until all sugar is incorporated. Heat the gelatin (be careful not to boil it)so it liquefies, add 1 teaspoon of mascarpone, mix well and pour the mixture into the mascarpone. Stir until all ingredients are combined well.
- Add whipped cream to mascarpone and stir. Pour the mixture over the cookie crust. Put the raspberries on the top and leave in the fridge for about 1 hour.
- Prepare the raspberry jello. Once jello is starting to thicken pour it over the mascarpone layer with raspberries. Leave overnight in the fridge.
