I have recently stumbled upon a post about the health benefits of millet and decided to introduce it into my diet.
I was quite surprised how delicious it is.
Here is the recipe of a millet salad that is quite easy to prepare but is so delicious and satiating.
It's vegan friendly but those of you who do love the meat (I do include myself here) will also find its rich taste amazing.
Here we go
Ingredients:
100 g millet
500 g fresh spinach
two tomatoes
two cucumbers
1 bunch green onion
1 bunch green garlic
1 bunch parsley
salt
extra virgin olive oil
juice of 1 lemon
Preparation:
- Rinse the millet carefully. Boil it in water at 1:3 ratio (1 part millet to 3 parts water) for approximately 20 - 25 minutes. Watch it closely at the end because when all the water is evaporated it may burn on the bottom of the pan.
Remove from the stove and rinse it in cold water - then strain it for at least 10 min so the excess water does not go into the salad. - Chop the tomatoes and cucumbers in small cubes
- Finely chop the green onion, garlic, spinach and parsley
- Mix everything in a big bowl, season with salt and extra virgin olive oil to you liking, then add juice of the lemon.
Of course you can replace/add more green leaf vegetables to suit your taste.
