I made Christmas Stollen, using candied fruits and spices that I made in the past months.
Ingredients:
- 30 g of fresh yeast
- 130 ml of coconut milk
- 1 tablespoon of all-purpose flour
- 330 g of all-purpose flour
- 50 g of sugar
- a pinch of salt
- 1 teaspoon of vanilla extract
- 3 teaspoons of apple spice (or cinnamon and a beautiful t of cardamom)
- 3 teaspoons of mandarin spice
- 140 g of margarine
- 70 g of candied mandarin and lemon slices
- 60 g of raisins and cranberries
- 3 dates
- 2 dried figs
- 30 ml of hot water
- 100 g of mixed nuts (pistachios, walnuts, hazelnuts, cashews, almonds)
- 2 tablespoons of powdered sugar
Preparation:
- Crumble fresh yeast into warm coconut milk and add 1 tablespoon of flour and mix together. Let it activate in a warm place.
- Sift flour through the sieve into a bowl.
- Add activated yeast mixture and spices; sugar, salt, vanilla extract, apple spice and mandarin spice.
- Add melted and margarine cooled to a room temperature.
- Start mixing it with a fork and later knead it with your hand.
Cover it with a kitchen cloth and place it in a warm place for 1 hour.
- Cut figs and dates into smaller pieces and place it in a small bowl. Add raisins and cranberries. Pour 30 ml of hot water over it and let it soak up for sometime.
- Strain dried fruits. Cut nuts into smaller bites and add it to the dried fruit mixture.
Mix well.
- Cut lemon and mandarin slices into smaller bites and add it to the dried fruit mixture bowl.
- Roll the dough on a lightly floured surface and cover it with dried fruit and nut mixture.
Roll the dough and place it in a small bread mold. Cover it with a kitchen cloth and let it rise in a warm place for about 20 minutes.
- Place it in a preheated oven at 185°C and bake it for 35-45 minutes.
- Cool it down completely and shake with some powdered sugar.
