These cookies are made of homemade Nutella that I made a few days ago. This recipe needs a bit more of perpetration and time, but it's so much worth it.
First we need to prepare Nutella and freeze it.
Then we need to make cookie dough, trapping Nutella inside the cookies.
When we bite into the cookie, we find melting chocolate.
These cookies are very special to me, because they remind me of a special person.
Ingredients:
- 12 teaspoons of homemade Nutella
- 3 flax eggs (3 tablespoons of flaxseeds and 3 tablespoons of water)
- 220 g of flour
- 50 g of cocoa powder
- 80 g of sugar
- 1 teaspoon of baking powder
- a pinch of salt
- 115 g of margarine (room temperature)
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of vanilla extract
Preparation:
- Freeze Nutella. Scoop 12 teaspoons of Nutella balls out of the jar and place them on a baking paper. Place them back in the freezer so they don't melt.
- Prepare the flax eggs, grinding 3 tablespoons of flaxseeds and mix it with 3 tablespoons of water. Let it soak for 10 minutes.
Add apple cider vinegar and vanilla extract to it.
- Sift flour, baking powder and cocoa powder through the sieve in a bowl. Add salt and sugar and mix well with a whisk.
- Add margarine to the bowl and crumble it into the dry ingredients with a fork.
Add flax eggs with vanilla and vinegar and add it to the bowl.
- Start kneading the dough with your hand until it's all evenly combined. Don't overwork the dough.
- Make 12 balls out of the dough, big as a walnut.
Flatten the balls of dough with your hand.
- Take the frozen Nutella balls out of the freezer and place them on flattened pieces of dough. Mold the dough into balls, trapping the frozen Nutella inside.
We need to do this quickly, otherwise Nutella will start melting. - Place them on a baking tray with baking paper and put it in a preheated oven at 190°C for 12-14 minutes.
- When done, leave them on a baking tray for a few minutes, then transfer them on a cooling rack.
