Delicious chocolate mug cakes with melting chocolate in the middle.
Ingredients for the molten lava:
- 115 g of vegan chocolate
- 115 ml of coconut milk
Ingredients for the cake batter:
- 225 g of all-purpose flour
- 60 g of sugar
- 3 tablespoons of cacao powder
- ½ teaspoon of baking powder
- ¼ teaspoon of baking soda
- ¼ teaspoon of sea salt
- 60 ml of apple sauce
- 115 ml of coconut milk
- 50 ml of canola oil
- ½ teaspoon of apple cider vinegar
- 1 teaspoon of vanilla extract
Preparation:
- Melt the chocolate in a double boiler.
Slowly add 115 ml of warm coconut milk.
Mix it together until getting a smooth texture.
Let it cool down and place it in a freezer for 2 hours. - Combine dry ingredients in a bowl; flour, sugar, cacao powder, baking powder, baking soda and sea salt.
Mix it well.
- Grate or blend an apple to get an apple sauce.
In a small pot, combine wet ingredients; apple sauce, coconut milk, canola oil, apple cider vinegar and vanilla extract.
- Add wet ingredients to the dry ingredients and mix it slowly with a spoon or electric mixer.
Mix until all well combined, but don't overmix as the batter will get tough.
- Pour it in greased cups a bit more than half a cup.
With a spoon, scoop out a tablespoon of frozen chocolate molten and put it in a mug on top of cake batter.
Cover it with more cake batter, but don't completely fill up the mug with it, allowing the cake to have space to rise.
- Place them in a preheated oven at 180°C for 20-25 minutes.
- If using small cups or mugs, you can try flipping it out on a plate.
Decorate it with berries.
