Ingredients:
- 5 dates
- 50 ml of hot water
- 4 kiwis
- 2 tablespoons of lemon juice
- 200 g of all-purpose flour
- 1 tablespoon of baobab powder
- 59 g of coconut shreds
- a pinch of salt
- 1 teaspoon of baking powder
- 60 g of sugar
- 70 ml of canola oil
- a splash of water
- 1 teaspoon of vanilla extract
- 2 tablespoons of poppy seeds
- 1 teaspoon of powdered sugar
Preparation:
- Soak dried dates in hot water for a few minutes. Peel and cut kiwis into cubes and blend it together with dates and lemon juice in a blender.
Add sugar and canola oil and mix with an electric mixer until the sugar dissolves. Add baobab powder and vanilla extract and mix until all well combined.
- In a seperate bowl, mix together all-purpose flour, coconut shreds, salt and baking powder.
- Start adding flour mixed with coconut shreds and baking powder. Add it slowly, spoon by spoon while mixing with an electric mixer.
- When all combined, mix in poppy seeds and pour it in a baking tray.
- Bake at 180°C for 25-30 minutes.
- Cool it down before cutting and serve it dusted with powdered sugar.
