Lobster And Pasta For Dinner!
Large Bunch of Asparagus, chopped to segments about an inch long
About a pound of cooked Lobster Meat, shelled
finely diced clove or two of garlic
Small can non fat evaporated milk
Nice EVOO Olive Oil
Coarse Sea Salt and Fresh Ground Pepper
Shredded Parmesan Cheese
Boil the pasta in one pot, when finished, drain pasta, but save one half cup of pasta cooked water.
In a separate pot, heat Olive Oil, then add chopped garlic
simmering, until golden
Add lobster meat, stir in Asparagus sections, and season with salt and ground pepper.
When lobster and veggies are heated, reduce flame to slight simmer, and begin adding pasta to meat/asparagus.
Add some pasta, mix, add some water, stir, add some pasta, mix, water, stir, until all ingredients are combined
Lastly, add the evaporated milk, (I prefer it instead of cream, for less fat) and thoroughly stir it all until well combined.
A few notes, to remember, Red sauce is always an awesome choice for dinner, but, some nights, it's simply too hot and muggy, with the beach burning, so, a lighter choice for pasta is this, above! Also, remember, Asparagus has some unappreciated affects, so choose this meal carefully... or, choose better timing. If you go with this meal, have pineapple all day, for two days (it makes everything sweeter), then, entertain your friend for a steamy night... then, go with this meal for a late night energy boost!
