Kaiserschmarrn is a traditional austrian dish and a nice desert after lunch or dinner. I like it very much, thats why it is one of the dishes i cook pretty often. I like to eat it together with sugar and apple puree, but also damson puree is very good together with the Kaiserschmarrn. There are different recipe's on the internet, but i like it the most when i use 2 extra eggs with it. This makes the Kaiserschmarrn much softer and the color is beautilfull yellow.
For 3 People you need following ingredients:
- 200 grams of wheat
- 30 grams of sugar
- 1 finger full of salt
- 4 eggs ( i take 6 for better color and a softer kaiserschmarrn)
- 300 ml of milk
- 40 grams of butter
- 30 grams of raisins
Cooking Instruction
i take a bowl and pour wheat, milk, salt and sugar together. Then i separate the Egg yolk from the white of the egg and put the yolk into the bowl and the white of the egg into another bowl and then i beat the egg white until stiff.

Then i slowly mix the beaten egg white togehter with the other ingredients except the butter. Here you have to be careful and try to keep it as soft as possible to get a decent soft "Kaiserschmarrn" in the end. I use a pan to melt the butter and then i pour the mixture in the pan.
Now i need to be careful not to burn it so i slowly turn the Kaiserschmarrn every few seconds. At the End i add the raisings and sugar. Then it's up to you if you want to serve it with stewed plums or apple puree. I also like to eat it together with blueberries.
