Mama will share another of her trusted budget beaters with you today - a Sausage Hot Pot; real comfort food, easy to prepare and very tasty .
She's been super busy with wedding guests - no one is getting married in the family though, it's guests that are here for an upcoming wedding, so there's been a lot of coming and going at Lily's Cottage
Sausage Hot Pot
Ever wondered how the humble sausage was born?
Sausage making actually is a traditional method of food preservation. Ground meat is spiced, stuffed into intestines or synthetic material; the sausages are sometimes cured, smoked and dried, and the latter methods do not require refrigeration. Sausages were popular way back during the times of the ancient Greeks, Romans and even Europeans according to wikipedia.
The ingredients for her sausage hot pot -
Look at those crispy fresh green beans straight from her garden.
Sausages were twisted to make shorter sausages more suited for the hot pot & veggies peeled. Note, she would normally cook the baby potatoes in the skin, but none of these ones had blemish-free skin!
How to make this - brown half an onion & 2 cloves of garlic in a little oil.
Add sausages, then carrots, baby potatoes & baby onions and sautee for a little while.
Remember you can add any veggies you fancy, but the harder veggies goes in first.
Add beef stock to just below contents & cook over a low heat.
Add green beans & mushrooms and continue cooking till beans are done.
Thicken with brown onion soup powder or any gravy powder of choice.
So much steam coming from the pot that it's hard to see the rich gravy, but the flavour is divine, wish Mama could let you have a little taste.
Papa Bear loves his gravy and has been waiting patiently...no I'm lying...impatiently, for his dinner :) Mama served this with rice.
