Mama's been having a really hectic time here at her little bnb Lily's Cottage, firstly with wedding guests from afar and then Easter holiday makers arrived, left & arrived again; so today's budget beater is a super speedy meal that she always puts together in a flash when really really rushed for time!
Ingredients required, yes this is all you need!
Firstly cook shell noodles (or any other shape), drain & leave aside.
Fry sliced onions in a little oil.
Add diced tomatoes, fresh basil or any other herbs you fancy.
Cook till tomatoes are done, but add a dash of sugar to break the tartness plus season to taste.
Drain a can of Tuna and add to tomato sauce.
Toss a little to mix ingredients.
Add noodles and mix lightly.
Add grated cheese and cover with lid, leave on a low heat till cheese has melted.
Top with Parmesan cheese
Serve this delicious speedy pasta dish with a light salad.
