One of my favorite dish I prepare in our table.
This Adobo is loaded with garlic. Instead of adding soysauce,
I used salt and atsuete oil.
Try this at home! you will really enjoy the taste!
Preparation Time: 10 mins Cook Time: 50mins Total Time: 1 hour
Serving: 7
Ingredients:
1 kg chicken sliced in serving size
¼ kg chicken liver
2 garlic cloves medium size minced
½ teaspoon ground pepper
3 tablespoon of atzuete (annatto) seed
¼ cup vinegar
1 tablespoon rock salt
½ cup water
5 tablespoon cooking oil
Preparation:
a) Add ¼ cup warm water to atsuete seed (annatto), mix to extract the oil.
b) Add ¼ cup vinegar to minced garlic. Smash it then drain the garlic, separate the vinegar.
Instructions:
- Heat the pan in medium-high fire.
- Add the sliced chicken, minced garlic, ground pepper, salt, atsuete oil and water then mix.
- Let it simmer for 20 to 30 mins, add the liver.
- Once it is cook add the vinegar then simmer in 5 mins.
- Separate and set aside the sauce.
Add the cooking oil and let it fry for only 10 mins.
Add the sauce slowly, in low heat in 5 mins.
Ready to serve for 7-8 people depending on their appetites.
Best serve in fish sauce with red chilli. Enjoy!
