Pansit Cabagan is a well known local pansit in the province of Isabela. It's located at the northern part of Luzon in the Philippines. Pansit means "Noodles" and Cabagan is one of the municipality of Isabela. That's where they got the name.
What makes this pansit special? .. because of the home made noodles. The size of the noodles are smaller than the typical noodles around and the taste is disticnt to other noodles.
The noodles cooked with soy sauce and special ingredients then topped with quail eggs, stir fried liver, crispy fried pork belly and onion leaves..
BTW, don't forget to sprinkle a Calamamsi juice on it. You're gonna love this.. :)
