It’s Monday, and quite frankly we all need a little pick me up today, am I right? Something to give you a fresh start to the week, from a weekend full of relaxation & fun - nobody wants to head into work after that! Luckily, this delicious Acai bowl is the perfect treat for giving energy where it‘s so desperately needed!
If we all haven’t heard enough of this; fruit is pretty healthy for us! But I mean. Peanut butter is from a plant too right? 😉 though this recipe would be tastiest made with peanut butter, if you do not want to use it or if you have an allergy to it, using ANY other nut butter would create the exact same product, just different taste. Almond butter would be a delicious alternative, or sunflower seed butter. Yum 😋
This granola kind of reminds me of those Nature’s Valley granola bars that I’d take for lunch to school when I was a kid, that would just crumble to itty bitty pieces and fall down through my clothing and I’d be a hot mess throughout the rest of the day. I realize this probably sounds like a HORRIBLE comparison... but I’m pretty sure I went back for those bars every damn day, and I know you did too! 😉
But anywhoooo... so I'm trying to figure out our entire life atm. My husband & I just got a car of our own finally! We’ve been using this beat up 2001 Ford F150 truck from my in-laws who let us borrow it for so long now, the new car feels like a spaceship to us! Hahahaha, don’t get me wrong I’m so so grateful we even had a vehicle to begin with - but I’m just so happy to have a new baby now! We’re also looking into purchasing a hollow sprinter van, and converting it into a tiny home on weels... so that journey will be coming soon. I’ll be blogging/vlogging the entire process of building it out on YouTube & Dtube & Steemit so stay tuned for that! So excited! I’m also 2/3 of the way through my immigrations process... and I can see the end of the tunnel. It’s so close! But it has been the most stressful thing I’ve gone through. It’s taught me SO much about myself, my life, and everything. It’s been a damn test for sure, but I’m so glad I’m finally coming to the end of it.
Back to the recipe... I love peanut butter on *almost* everything, in healthy moderation of course 😉 so if you jive with that, then please let me know what you think of this recipe! ❤️
Blackberry Açai Bowl w/Peanut Butter Granola
Ingredients:
For the Açai bowl:
- 1 packet of Trader Joe’s Brand açai puree
- 1/2 cup frozen blackberries
- 2 frozen bananas
- 1 cup of plant milk (depending on your desired consistency you may want more or less)
For the Peanut Butter Granola:
- 1 cup of rolled oats
- 1/2 tsp ground cloves
- 1 tsp cinnamon
- 3 tbsp maple syrup
- 1/4 cup creamy peanut butter
- 1/2 tsp vanilla extract
Instructions:
- for the Granola: preheat oven to 350°F and add peanut butter, vanilla extract & maple syrup to a glass bowl. Place over a pot of boiling water to melt into a creamy liquid. Mix this with the oats & spices (you’ll have to use your hands!)
- place onto a lined baking sheet and bake in the oven for 30 minutes or until golden brown
- remove from the oven and let cool for it to harden for at least 10 minutes! Done!
- for the Açai bowl; throw it all into a high speed blender or food processor and blend until it forms the creamy consistency you are going for!
- add it to a bowl with some granola, fresh blackberries & some coconut flakes and serve it on up!
- enjoy!! 😋
