THE COOK STORY:
Biryani is a very popular food which is being more and more popular as years go ahead. Many small joints, benefit high just by selling a unique tasting Briyani with some secret receipt.
Being a person who cannot live with Briyani, here one of my style of making.
We need,
Basmati Rice (soaked it for 30-45 mins);
Make a chicken broth (a simple chicken soup with chicken drumsticks, a bit of onion slices, tomatoes and garlic).
To a bigger vessel, add ghee and oil in the ratio 4:1 and add spices (Cardamom, peppercorns, cinnamon, bay leaf, star anise, and some Mughal spices, add onions (fried until dark golden brown), ginger garlic paste (freshly made paste) and tomatoes. Then, add coriander leaves and mint leaves.
Add ghee again! 😅
Now chili powder, coriander powder, cumin powder. Mix well.
Now add the chicken and the chicken broth. Add the combination of broth + whole milk + coconut milk according to the rice in the ratio (1:1). Add some extra milk upto half cup when the rice starts to boil.
Add ghee again! 😅
Close the vessel and leave it for 15 mins in high pressure or 2 whistles in a pressure cooker.
Switch off the heat and then, mix well, if the rice is not cooked(as sometimes it does, bcz of various varieties of rice), add hot water accordingly to cook again. (Check often).
After the rice is cooked, check for salt and finally add ghee, mix a bit and close down.
‘DUM’ it, put off the heat and leave the vessel closed in steam for 45 mins. (This adds some best flavor blend).
