Here's a recipe that's beloved by my family and contains lots of healthy fats in the form of avocados. This is also my entry for #fruitsandveggiesmonday by . I always forget to take the pictures of the fries before eating them, so I'll make do with some lovely avocado photos instead ;)
Ingredients:
- 1 ripe (but not overly ripe) avocado
- 1/2 cup breadcrumbs (gluten-full or gluten-free)
- Seasonings of choice (I used dulse flakes, parsley flakes, crushed chili flakes, garlic salt, crushed cashews or sunflower seeds)
- Cooking oil
- Water
Instructions:
Cut the avocado in half, remove the pit, then cut into thin slices. In a plate, pour the breadcrumbs and mix in your choice of spices/seasonings. In a bowl, mix in 1 tbsp of oil with 1 tbsp of water. Dip the avocado slices into the oil-water mixture and cover them with the breadcrumbs.
You can now fry these or bake them.
To fry: heat some oil (medium-high) in a frying pan, and fry the avocado slices for ~30s on each side.
To bake: Preheat oven to 400F, bake for 10 minutes, flip them over and bake for another 10 minutes. Eat as is or with a dip of your choice (ketchup or hot sauce works but I like dipping them in hummus).
You can use ripe avocados or these fries atop burrito bowls and salads too!
