It is a beautiful day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our volunteers today, cooking over fire using our handmade earthen rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.
We made thick, hearty, earthy MUSHROOM BURGERS today!!
These were totally delicious! We served them with all kinds of fixins so everyone could dress them to their exact tastes.
To make the burgers, we mixed bread crumbs & eggs with lots of fresh veggies: onions, carrots, celery, garlic, and of course mushrooms! We used lots of salt and pepper and a little bit of worcestershire sauce. Next time we make them, we will probably add lots of cumin & maybe some chile powder too. It's a very easy formula that can be made with a variety of herbs & spices to change the flavor.
We shaped the mix into patties and sautéed them in the cast iron skillet over fire. They were a bit too delicate to cook on the grill and potentially would have fallen apart. When they get nice and brown and crispy on one side, give it a flip so the other can cook too.
We served a colorful fresh salad on the side. Some people chose to use salad as the base for their burger rather than a bread bun.
We topped our garden greens with red onions, tomatoes, tri color bell peppers, cucumbers, and more mushrooms. This was definitely a super plant powered meal with lots of vitamins & minerals!
We also made a fast veggie sautée with bell peppers, onions, even more mushrooms, and herbs. It's nice to have a combination of textures in a meal, and raw contrasts nicely with cooked veggies.
Everyone topped their burger differently! This epic beauty has homemade mayo, dijon mustard, wonderful creamy avocado, and blue cheese, with some spicy hummus and salad with pesto for garnishing. Super epic, super yummy, super satisfying, and super healthful!!! It was a really great meal that everyone at the GOE really enjoyed.
