It is a fantastic day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our full time volunteers on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!
We made a delicious vegetable lasagna feast!!
We had tons of sustainable food today! We made lasagna, chicken parmesan, pizza, garden salad, squash, and even dessert!
We started with a colorful spinach salad. We topped tender leaves with grated rainbow carrots, red onion, cucumber, and cherry tomatoes for lots of flavor and high nutrition content!
We made a vegetarian lasagna! This has layers of noodles, ricotta and mozzarella cheese, tomato sauce, and zucchini, onion, and yellow squash. We don't use our outdoor Cobb oven very frequently, so rather than bake this delicious dish, we simply heated it on the wood burning stove top until hot and bubbly and the cheese was all melty!
We made a thin crust pizza with tomato sauce, pepperoni, sausage, cheese, onions, and peppers. It's a great dish for an Italian table! And we can cut the slices as small or large as we want so that everyone who wants a piece can get some.
For a side dish, we steamed sweet yellow acorn squash and scooped out the flesh. Then we mashed it with a little olive oil and a sprinkling of fresh herbs.
We used some leftover chicken tenders from yesterday's sustainable feast to make a pan of chicken parmesan! These have lots of cheese melted all over them, and we sprinkled them with more herbs.
It was a hearty skillet full of yummy chicken parmesan, and a great way to use up leftovers!
Such a beautiful table with many delicious dishes, and plenty of options for meat eaters, vegetarians, and even our vegan friends.
We even served a delicious dessert! We sliced a moist pound cake and drizzled it with strawberry lavender jam, and arranged it to make a beautiful sweet treat.
It was another wonderful, sustainable, FREE feast, and we give thanks for the many blessings of this abundant life! Thanks for sharing it with us today.

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
