It was my first time visiting Segorbe; a town of Castellón located between the Sierra de Espadán and the Sierra Calderona, bathed by the Palancia river and considered a cultural asset for its architectural heritage.
Among the various attractions of the municipality, such as its castle, its towers or the famous fountain of the fifty pipes, is the signature cuisine restaurant Gastroadictos.
And I include it within the architectural cultural assets of the locality because, indeed, it is almost to erect a monument in its honor.
Coinciding, by chance, with the XXI Jornadas Gastronómicas del Alto Palancia, we booked a table that morning at the aforementioned restaurant.
They treated us very kindly upon arrival and, once we were seated, they began to bring us the dishes from the tasting menu of local products.
Segorbe craft beer
El huertico de la comarca: different vegetables, with different degrees of cooking and processing, on a bed of nuts that emulate the soil of an orchard, watered with extra virgin olive oil from Segorbe.

Piedra de queso: hard coating of white chocolate with coloring and spices, containing inside a delicious paste of Almedíjar's cheese.
¡Ahúmatelo!: bowl of fresh rosemary on which to smoke right there, with the help of a torch, the raw strips of salmon, cod and mackerel; accompanied by homemade tartar sauce and pickled carrot.
Crème brûlée of pate: slice of toasted buckwheat bread accompanying Santa Teresa's pate terrine.
Mar Mediterráneo y Sierra Espadán: prawn stew with chickpeas from the land, with coconut milk and sesame.
Arròs llauna: rice with various local products baked in an old metal tray.
Joyas de nuestra tierra: Marcona almond, butter cream, orange blossom foam, crispy white chocolate with cinnamon, crunchy crushed biscuit base, pumpkin puree with its pips and orange blossom perfume.
