Tonight I prepared one of my favorite meals. Everything was easy to prepare, healthy and tasted fantastic.
From top left, going counter clockwise we have:
Butterfly Shrimp with Organic Quinoa & Brown Rice garnished with fresh Arugula and Spinash, Caesar Salad topped with Seasonal Vidalia Onions, Homemade Blackberry Cobbler and Stella Rosa Imperiale Rossa Lux Sparkling Wine

Vidalia onions are in season right now and their sweet taste enhances everything. They taste so incredibly good you can eat bites of the delicious onion by itself! I add a splash of extra virgin olive oil to my fresh salads for the bonus HDL and flavorful taste.

The stay at home orders were lifted and many restaurants in my area reopened with new guidelines in place.
Regardless of the "freedom" to dine out again, we have only eaten out once so far -- at an Mexican restaurant that serves "Arroz con Pollo" made exactly the way my son loves.
Please continues to stay healthy while practicing social distancing. Good news is that following safety measures helped flatten the curve.
