Ingredients
1/2 C sugar 1/2 C brown sugar 1 C grapeseed oil 3 eggs 2 C Gluten free flour mix 1 1/2 teaspoons baking powder
1 teaspoon baking soda 1/4 teaspoon salt 1 tablespoon cinnamon 1/2 C almond milk 1 tablespoon vanilla extract
2 C shredded carrots( i put them in a food processor) 1/2 C grated carrot 1/2 C fine coconut
Frosting
16 oz cream cheese 4 tablespoons butter 2 C icing sugar 1 teaspoon vanilla extract
Instructions
Preheat oven to 350 F
grease and flour 2 ( 9 inch) cake pans
In a bowl cream together oil,sugars, and eggs
In a separate bowl whisk together flour,baking powder,baking soda,salt and cinnamon.
gradually add the dry ingredients into the wet ingredients also adding the almond milk
mix until just mixed do not over mix
fold in the carrots, coconut and vanilla extract
pour into pans
bake 20 -30 min check with a square if it comes out clean its ready do not over cook.
for the icing
cream together butter and cream cheese and vanilla extract
add icing sugar mix until creamy
when cakes are cold place frosting in the middle of both cakes
ice the cake with the rest of the icing
