As my little family is gluten free, we want to experiment more... we're not huge fans of commonly available gluten free breads as they're mainly yeast based. I did some research on paleo breads as they seem to be more tolerable and they taste nice too.
I modified few recipes and came up with my own one to achieve something like on the picture below:
INGREDIENTS
2 cups of mixed nuts and seeds (I used pumpkin, flax, sunflower, chia, almonds, hazelnut and sesame) grinded into flour consistency
1/2 cup of yoghurt of your choice mixed with 1 tbsp apple cider vinegar
1 tsp baking powder
1 tsp baking soda
3 eggs
2 tbsp olive oil
Sprinkles: rock salt, poppy seeds, sesame seeds
METHOD
- Preheat your oven to 325F or 175C
- Mix all ingredients together into loose dough
- Prepare a bread tin, lay it with parchment paper and pour your dough in
- Smooth it out and sprinkle with rock salt, poppy seed or sesame seed
- Bake for ab.45 min and check with wooden stick
- Remove from oven and let it cool down
- Best stored wrapped in paper or foil in the fridge
