Functional Carrot Cake
Ingredients
3 eggs
1 cup of skimmed milk
1 cup of sunflower oil
2 cups of brown sugar
1 tea spoon of vanilla essence
2 small or 1 ½ medium carrots
1 table spoon of baking powder
1 cup of oat
2 cups of oat bran or oat flour
Directions
Step 1 : Add the eggs, milk, oil, sugar and the vanilla essence in a blender and mix.
Step 2 : Add the oat, oat bran and the baking powder into a deep bowl.
Step 3 : Add the ingredients from the blender to the ones in the bowl and mix well.
Step 4 : Pour all the mixed ingredients into a greased pan and put it into a pre-warmed oven for around 45 minutes (time will vary from oven to oven), insert a fork into the center of the cake, if it comes out clean the cake is ready. Enjoy!
