Coconut chia oatmeal
1/2 cup porridge oats
1 medjool date (or 2 if you like it sweeter), chopped
1 tbsp chia seeds
1/2 cup hot water
3/4 cup light coconut milk
1 tbsp dessicated coconut
pinch of salt (optional)
In a small pan combine the oats, chia seeds and chopped dates. Pour the hot water into the pan and let soak for 10 minutes. Add the rest of the ingredients, mix well, bring to a boil and cook for about 5 minutes, stirring frequently. Let cool to the temperature you prefer and serve with your favourite toppings.
